We love beer unashamedly. Not only because it tastes fantastic, but because it can bring such happiness. It brings people together to cut loose, have a good time and put the world to rights. It has been a source of refreshment and nourishment since ancient times and has inspired countless artists and great thinkers. It has fuelled rebellions and shaped British culture.

Our approach may be modern, but this great tradition - of beer as a source of courage and inspiration, as a drink that frees the mind - is a major influence on what we do. In turn, we try to sow a few seeds of rebellion among our friends and customers, a gentle reminder that life is not all about working and achieving - there is beer to be drunk, pleasure to be had and dreams to follow.

Calling on his 10 years of brewing experience, John custom-designed our brewhouse in association with Willis European. Clearly better kit makes for better beer and a more enjoyable brew day, but we think that only extends so far – there's no push-button brewing at Powderkeg. Our brewing process remains a hands-on experience purposefully. The brewer is required to pay attention, to craft the beer - using knowledge and experience to assess ingredients, testing and making judgement calls throughout the process; essentially to make the beer themselves and put their stamp on it.

How We Brew

Putting a brew together - from raw ingredients to being ready to ferment - takes about seven hours all-in-all. While that is quite quick, after that we slow things right down. We take up seven weeks to ferment, dry hop and condition a beer. In comparison, most real ales leave the brewery in seven days. Taking this time allows us many advantages – the yeast can take its time to ferment the beer, meaning no off-flavours and a clean finish to the beers. Dry-hopping allows us to further build the complex layers of flavour, and the extended conditioning time lets it all come together nicely for a rounded full flavour. Keeping the beer in-tank until it is completely ready also allows us ultimate quality control. The beer that leaves here is the beer you will drink - and nothing leaves the brewery unless its 100% great.

During this lengthy process, we also spund our beers; meaning we trap the carbon dioxide created during fermentation in the beer. So the majority of carbonation in our beers is in fact natural, even when it's a keg product.

All of which means it's all about the beer here at PK. We are hands-on beer enthusiasts with years of professional experience in a custom-designed brewery, making the beer we love, with pride. It͛'s sad how rare that can be in this industry, but you'll know when you find it - it's a difference you can taste.
